Fiesta Orange Salad
3 large oranges, peeled and sliced
½ of a mild red onion, sliced thin
3 Tbsp. salad oil
2 Tbsp. wine vinegar
½ tsp. Shakers Fiesta Mexican Blend
Arrange oranges and onion slices in a bowl. Mix together oil, vinegar and Shakers Fiesta
Mexican Blend. Pour over salad. Serve in lettuce leaf cups and garnish with black olive slices.
Fast and Easy Mexican Fajitas
1/3 cup wine vinegar
1/3 cup olive oil
1 to 2 tsp. Shakers Fiesta Mexican Blend
Mix the above and pour over about 3-31/2 pounds of flank steak. Marinade several hours or overnight. Grill until desired doneness. Let meat rest 20 minutes before slicing to retain their juices. Serves about 6.
Serving suggestions: Serve with flour or corn tortillas, cheese, grilled onions and peppers, sour cream, guacamole and salsa.
South of the Border Baked Corn Pudding - Serves 4-6.
3 Tbsp. butter
½ large onion, chopped
½ medium size red bell pepper, chopped
½ medium size green bell pepper, chopped
3 Tbsp. flour
1 to 2 Tsp. Shakers Fiesta Mexican Blend
1 can (14 oz.) cream style corn
3 eggs (slightly beaten)
1 cup milk
Cook onion and peppers in the butter. Stir in flour and Shakers Fiesta Mexican Blend.
Stir until bubbly. Remove from heat then add in the corn eggs and milk. Stir well and
pour into buttered shallow 11/2 quart baking dish. Bake at 350 degrees uncovered for 45
minutes or until the center is set when shaken gently.
